Tasty Tuesday: Healthy Cookies that Taste like Oreos

If you have a strong sweet tooth and your world seems incomplete without a sweet dish or two, you are in for a treat today. In today’s Tasty Tuesday, we brought to you an amazing recipe of healthy cookies that will give you perfect Oreo-like taste without all those extra calories, additives, and artificial flavors. The cherry on top, the recipe of these cookies is super simple and easy that you would love to make a jar full of it.

Ingredients

  1 cup gluten-free oat flour
  ¼ cup raw cocoa powder
  2 tablespoons ground flaxseeds
6 pitted dates (soaked in hot water for 20 minutes)
  3 tablespoon pure vanilla extract
  2 tablespoons melted coconut oil
  2 tablespoons raw honey
  1 small pinch of sea salt
  1 can coconut milk refrigerated overnight
  3 tablespoons pure maple syrup

Method

  First of all, line a large baking sheet with parchment paper.
  Now, take a bowl, fill it with hot water and add all the pitted dates in it, and let them soak for about 20 minutes to soften.
  Meanwhile, when the dates are soaking, take out your food processor and add the oat flour, cocoa powder, ground flaxseeds, vanilla, coconut oil, honey, and sea salt. After the dates have soaked, add them too in the bowl of the food processor and mix well. The mixture is going to be crumbly.
  Take out the crumbly mixture and spread it onto the baking sheet with parchment paper. Flatten the mixture with the help of another parchment paper and put it in the freezer for 15 minutes.
  While the dough is freezing, take out your food processor again and add only the solid part of the coconut milk, vanilla extract, and maple syrup, and blend it to form a whipped-cream-like mixture. Put this mixture in the fridge.
  Now, take out the dough and cut it in your favorite shapes with the help of a cookie cutter or knife (we recommend cut them round). Now take one cookie round and spread the whipped-cream-like mixture over it and place another cookie round over it to make a cookie sandwich.
  Munch on!
